The last night in Hilton Head was a quiet one. Most of my friends left to go back to work earlier in the day, so our sixsome turned into three. It was still a great Tuesday. We listened to music as we enjoyed the final opportunities to play the games that contributed to a great trip. We turned on Netflix and watched comedy specials as the trip came to a close. I believe it was during the viewing of Baby Cobra that I remembered my great idea from Saturday that never actualized.
The weekend before Auntiefest, the name I affectionately gave my 30th birthday events, I celebrated with karaoke at home. My mentee gifted me a bottle of Patron XO Cafe, a drink I’d been meaning to try. After opening it up on Saturday once we arrived to the beach house, I discovered that this would be amazing with vanilla ice cream.
So midway during the trip, I grabbed vanilla ice cream. And forgot about it until the night before when we were about to leave. I pulled a bowl out of the cabinet, scooped about 2-3 scoops, and poured a little bit of the Patron XO Cafe on top.
It was just as magical as I imagined.
Imagine coffee ice cream with a kick. Imagine an adult Jamocha shake. Imagine the best thing you’ve never had. It was all that plus some.
When I was younger, my mom would make coffee just so I could pour it over my vanilla ice cream. Auntiefest brought that back to me. Except, in a grown up way that mirrors my new decade.
If you’re an ice cream head and/or like it when alcohol shows up in places you wouldn’t expect, you’ll love this. Trust me.
Boozy Coffee-Flavored Ice Cream
- 2 scoops vanilla bean ice cream
- 1/4 cup Patron XO Cafe
Add ice cream to your bowl.
Pour 1/4 cup of Patron XO Cafe in the bowl over the ice cream.
