I am sick of buying food out. Mostly it’s because I’m sick of having to choose between this random veggie plate (aka sides) or this salmon/turkey situation. Restaurants don’t really cater to my diet, so I try to make due. And you can only eat salad so many times.
So I made my Clicklist order one day and picked it up after work. I loaded up on veggie burgers, meatless meats, salmon, rice, quinoa, and frozen veggies. I knew that I’d be cooking but I also didn’t want to stand in the kitchen forever trying to get a meal together. Easy and simple was my M.O.
But I picked up this black rice because I remember eating it once from this vegan restaurant in Buckhead. I was fascinated and wanted to make it one day, so I was glad to find it in Kroger.
After coming home from work or the gym (I can’t remember) one evening, I pulled out a few ingredients and decided to make a bowl-based dinner. It took a little over 30 minutes to finish, but it was delicious nevertheless. This dinner made two portions — one for dinner and another for lunch the next day. I had about half a cup of rice leftover after I packed everything away so that was a win for future meals.
Veggie Root Bowl
This is a four ingredient recipe that really can be done quickly if it weren't for the rice.
- 1.75 cup chicken broth
- 2 patties Hilary's Eat Well Root Veggie Burger
- 1 bag Kroger Broccoli Cuts - Frozen
- 1 cup Hinode Black Rice use a steamable bag of rice if you don't feel like watching the stove or are really hungry
- 1 drizzle olive oil
Put 1 cup of Hinode black rice in a pot.
Pour 1.75 cups of chicken broth over the rice and turn pot on to medium heat.
You want the contents of the pot to get to a boil and then cover and turn the heat down. Stir and let it simmer for 35-45 minutes.
After the broth is absorbed, turn the heat off and let the rice sit for 5 minutes.
Place in base of bowl (or plate, if you want.)
Read the instructions on the bag. Depending on microwave voltage, heat accordingly.
Let bag sit for about 3-5 minutes after the microwave beeps.
Put some broccoli in the bowl over the rice.
Root Veggie Burger
Drizzle skillet with a little bit of olive oil -- not too much.
Read the box. So cook on the stove on medium heat for about 3 minutes per side. If your skillet is big enough, cook both patties at the same time.
When both patties are done, let sit for about 3-5 minutes.
Crumble patties over the rice and broccoli.
